Holiday Antipasto
Happy Holidays! Having friends over? A vegetarian version of antipasto is an easy dish to make, and fun to enjoy. Since we are hosting Christmas Eve for my parents and Christmas dinners for AAM’s parents, I wanted an easy dish for when our friends stopped by yesterday. While their twins ran around with Serafina, we snacked on veggies, cheese, and bread.
This antipasto included, gerkin pickles, artichokes, roasted red peppers, hearts of palm, grilled zucchini, assortment of olives, and pickled carrots. One could easily grill more veggies on a panini press, like I did with the zucchini. We added bread, goat cheese, and brie. This was definitely not rocket science, but the perfect thing to do when you want to enjoy food with people, but avoid the fuss.
