Quick and Healthy:A weekly meal for busy people, a reminder that healthy is easy, and the perfect alternative to take out.
This is a no brainer meal, but man is it yummy. The basil infused olive oil adds lots of flavor, and is a great off season alternative to the fast wilting basil in stores. The key with having this taste so wonderful is high heat and well seasoned veggies. On the weekend or with guests, we also eat this as a side instead of salad.
Chop red peppers, yellow peppers, asparagus, and red onion into chunky bites. Generously grind fresh ground pepper, sprinkle some sea salt, dribble basil infused olive oil. Roast for 30 minutes at 400, and enjoy over rice/quinoa/barley.
