Guest Blogging Fridays: ML’s Macaroni Salad

In reaching the final edge of Spring, just perched right over the long hot and humid summer, we are in the height of picnic season in DC. Driving through Rock Creek Park, the park in the middle of the city, twice the size of Central Park, you see people sitting on their blankets by the dozens. We are still trying to find time for ours. Picnic season nicely converges with all those events that litter May and June with pleasantries, Mother’s Day, Graduations, Father’s Day, and college reunions.

With our upcoming 10 year college reunion approaching, my friends and I are planning a fun filled weekend in DC. ML and I are the two who remain in DC, so we have been looking forward to introducing our friends to all that there is to enjoy in DC these days, especially new restaurants. Nice dinners and drinks at night, but during the day we have three little babies to join the crew. In college and shortly after, we joked about the day we would all have kids. We decided we would have “Cousin Camp,” which started lots of jokes about who would actually care for the little ones. With three babies born within a year of each other, it is time for cousin camp to commence reunion weekend. ML’s macaroni salad will be perfect for our groups picnic. Thanks ML!

With BBQ season approaching, here’s a great side dish. Best to make a day before.
This is something I quickly pulled together using a couple of recipes.

ML’s Macaroni Salad


Mix together:

  • 1 box of elbow noodles
  • 2 stalks of celery chopped
  • 1 yellow onion chopped
  • 4 hard boiled eggs chopped
  • 1 Tablespoon dried parsley

Then mix the ingredients for the dressing:

  • 1 cup low fat mayo
  • ¼ cup cider vinegar
  • 2/3 cup sugar
  • 2 ½ tablespoons of ground mustard
  • 1 ½ teaspoon of salt
  • ½ teaspoon of ground black pepper


I made the dressing the night before then tasted it in the morning to see if I needed
more of anything. Finally mix it with the noodles and refrigerate for a few hours.
