Lentil and Tomato Stew

Serafina is now picky about flavor. We have been lucky that she likes a big variety of fruits and vegetables. Usually if she doesn’t like it at first, we just keep trying and it takes only a few more times to win her over. However as time has progressed, I notice she really prefers there to be spices or flavors added to her beans or green veggies. She prefers a meal with punch, which means that I have to now get creative with our ingredients. Two nights ago she was mid-meltdown, caused by hunger and new molars coming in, I had to quickly put something together for her. My planned meal was going to take too long, so I started scanning the freezer. It needed to be quick. However, I also wanted her meal to have some protein and a veggie. After finding lentils, peas, and feta,  I quickly mixed this meal together, and she LOVED it. Unfortunately, the camera wasn’t around, so no pictures for this one, but I will update it with one when I can. UPDATED: Picture added!

Lentil and Tomato Stew

  • 2 cups of homemade tomato sauce
  • 1.5 cups of lentils (if using dry lentils, make sure they soak for a few hours)
  • 1/3 cup of frozen peas
  • 1 tsp oregano
  • 3 tb of crumbled feta
  • salt and pepper to taste.

1. Combine the tomato sauce, peas, oregano, and lentils in a saucepan, and heat it over medium heat. Let simmer. Add salt and pepper to your own taste.

2. Once the lentils are cooked, place in a bowl and stir in the feta. Serve warm.
