A Quick Friday Meal- Zucchini Quesadilla

I love quesadillas. I mean really love them. Perhaps it is the cheese? The grilled veggies? The fast and easy way to eat them? However, we tend to go to the classic quick-fold burrito route in our house. Tonight, we decided to try something new, but old. Like all the recipes on vegetarian salmon, feel free to alter/add/enjoy. In fact, I would love for people to add their alterations in the comment section. Let us know about your delicious ideas!

Zucchini Quesadilla

  • 2 small zucchinis, sliced lengthwise
  • 1 cup of sliced purple cabbage
  • 1 cup of sliced yellow onion
  • 1/2 cup of black beans (rinsed and drained)
  • 1 cup of shredded cheddar cheese (or a cheese blend)
  • 4 tortillas
  • Canola Oil Spray

1. Heat up a panini press or a saute pan, spray with canola oil spray (keep oiled as you cook).

2. In a separate pan, saute the cabbage, zucchini, and onion in olive oil over medium. For a slightly grilled flavor, cooking it high and moving the veggies around works.

3. Place a tortilla on press or pan, fill half the tortilla with  bit of cheese, some black beans and  a handful of veggies and fold the other half over. Let cook until the cheese melted.

4. Top with avocado, salsa, ranch dressing, or other fun toppings. We ate ours with a very nice smokey salsa that was on sale, Yum!
