Chimichurri Rub (Real Simple Magazine)

A few years back, when we started to make gifts for family, I assembled three batches of spices rubs as gifts. Now, I have to be honest, I did not make these rubs up; they come from the December 2007 Real Simple magazine. I loved the idea of making the rubs for family, but once I was in the middle of the practice, I became overwhelmed with the task. After braving Costco for the ingredients, going to the container store for small spice jars, and finding giant mixing bowls, this small gift became quite the big deal. Additionally, we were making a huge batch. We multiplied the recipe by the relatives we saw that Christmas, and lets just say the math was interesting. Out of the three spices, the chimichurri rub is the one I continue to make and use. It is wonderful in beans and veggie mixes.

Chimichurri Rub from Real Simple Magazine

  • 2 tb dried oregano
  • 3 tb dried basil
  • 2 tb dried parsley
  • 2 tb thyme leaves
  • 2 tb kosher salt
  • 1 tb freshly ground pepper
  • 1 tb dried savory leaves
  • 1 tb smoked paprika
  • 2 tsp garlic powder
  • 2 tsp dried crushed red pepper

1. Whisk the ingredients in a medium bowl, and store in an air tight container.
