Easy Red Beans and Rice

Right now, I am swamped. October is a busy month for teachers, especially at independent schools, which means November is when I play catch up at work. Lately, we have been coming home late and the pantry is looking bleak. On my way home, I realized that sometimes I just forget to make the easy and obvious. So think of this recipe posting as a reminder that it is possible for us to make something nutritious, tasty, and fast.

Easy Red Beans and Rice

  • 1 cup of rice
  • 2 cups of veggie broth
  • 1 tb olive oil
  • 1 green pepper chopped
  • 1/2 cup of red onions chopped
  • 4 cloves of garlic minced
  • 1 can of red beans drained
  • 1/2 tb cumin
  • 1/4 tsp chili powder
  • 1/4 tsp pepper
  • 1/4 tsp salt
  1. Saute the garlic, green pepper, and onion in olive oil.
  2. Meanwhile in a separate pot cook the rice in the veggie broth
  3. Once the peppers and onions become soft, add in the beans, cumin, chili powder, salt, and pepper.
  4. Once the rice is cooked, mix it into the bean mixture.
