Pepper and Onion Marinade

You can tell it has been a bad day in our house when we have burritos. Not because we don’t love burritos, I mean seriously we are obsessed with them, more because they are the easiest things to assemble. We always have the ingredients on hand, and it is a quick way to make a meal filled with veggies and protein. Sometimes, I get tired of the same old ingredients, this is a quick way to have new flavor to those veggies. The recipe below is a great marinade that you can either roast the chopped onions and peppers or saute them in the dressing like I did below. I also have done this on a variety of things like roasted broccoli or sauteed zucchini.

Pepper and Onion Marinade

  • 1 tb olive oil
  • 1 tb lemon juice
  • 1 tb brown sugar
  • 1 tb soy sauce
  • 1tsp gresh ground pepper
  • 1 cup of chopped onions
  • 1 chopped red onion
  • 1 chopped yellow onion

  1. Whisk the first five ingredients together,

  2. …and pour over the peppers.
  3. Saute for 8-10 minutes over medium low heat, or until the peppers and onions soften.
