Winter Coleslaw Salad

In trying to use up some ingredients, I thought of a good side reminiscent of AAM’s favorite summer salad, coleslaw. I am not a fan of coleslaw, it is too soupy and flavorless, but this salad with blue cheese and dried blueberries shakes things up. AAM said that the dried blueberries were different, which is usually his polite let down. However, I liked them, so consider them optional. I served as a side with last night’s polenta peppers.

Winter Coleslaw Salad


Ingredients:

  • 2 cups of chopped purple cabbage
  • 1/3 cup of chopped onion
  • 1 cup of shredded carrots
  • 2 cups of chopped baby spinach
  • 1/2 cup of dried blueberries (optional)

Blue Cheese Dressing:

  • 3 tb mayonaise
  • 1 tb olive oil
  • 2 tb apple cider vinegar
  • 1/2 cup of blue cheese crumbles
  • 1 tspn Kosher salt
  • Splash of lemon juice

Directions:

  1. In a small bowl, whisk the dressing ingredients together
  2. In a large mixing bowl, toss carrots, spinach, onions, cabbage, and blueberries together and stir in the dressing to coat.
  3. Top with freshly ground pepper
