Zucchini and White Bean Orzo
If there is one thing I can not keep on the table, it is this meal. An easy dish to make for Serafina, AAM often lifts a few spoonfuls before I can scoop them into containers for school the next day. This is the perfect meal for vegetarian toddlers, adults, or even ominvores who want an easy weeknight healthy meal.
The wonderful thing about roasting zuchhini in olive oil is that the sweet flavors add a level of depth to the dish. Orzo is a buttery rice pasta, that every child loves. Add in cannelini beans, and you have a well-balanced dish that even the pickest of eaters can devour. I often add in leftover veggies into the dish, especially since Serafina tends to not notice due to her love of the other ingredients. The night I made the dish below, we added green beans from the night before, and it was still tasty!
Zucchini and White Bean Orzo
- 1 cup of orzo
- 2 cups of veggie broth
- 2 zucchini diced
- olive oil
- 1 can of cannelini (white) beans, rinsed and drained
- Salt and Pepper
1. Preheat the oven to 400
2. Cover the diced zucchini in olive oil, salt and pepper. Roast for 20 minutes.
3. Meanwhile, boil the veggie broth. Add the orzo, and cook according to the box directions.
4. Once the orzo is done, drain and add the zucchini and the beans. Stir together with any leftover veggies. Serve warm or cold

I’ve been sneaking zucchini into a lot of things lately, and Robb *gasp* has been eating it. I think he and Momo would both like this recipe. Printing….
I made this last night and it was terrific! My 2 1/2 year old is very good about eating veggies, but not zucchini. His comment on this? “mmmmmmmm.” thank you! I also made a mistake in the recipe (my excuse for not reading carefully? Two kids and husband at work.) I made the orzo in water not broth. To correct it, I dissolved two bouillon cubes in a small amount of water and poured it over the orzo afterwards. Seemed to work well as a last minute fix.
