Sweet Potato Spread
So, Serafina is now of the age that we have to start packing real lunches. No more cubes for this baby. The past few weeks, I have been experimenting with sending black bean quesadillas or pastas. She is still too young for peanut butter sandwiches, and the school is a peanut free facility. This means we will need to come up with some creative sandwiches for her time in preschool. A good friend suggested making a sweet potato spread. Since Serafina is slightly resistant to spinach, I took the opportunity to mix some into the spread to add a little iron and veggie to her lunch. Spread this on pita bread, you have a fantastic sandwich.
Sweet Potato Spread
- olive oil
- 1 large sweet potato
- 1 cup of baby spinach sliced in strips.
- 1/4 cup of onion
- 1/4 tsp cumin
- 1/4 tsp curry powder
- 1 tb tahini
- Salt and pepper to taste
- Pita bread
1. Pre-heat the oven to 400
2. Roll the sweet potato in olive oil, then bake in the oven for 45 minutes
3. In a saute pan, saute the onions in olive oil. Add the spinach, cumin, and curry powder.
4. When the sweet potato is cooked, remove the skin, and mash it with tahini and the spinach mixture. Keep mixing and mashing until it is stirred evenly through.
5. Spread on pita or toast.

Spinach isn’t a great source of iron (the oxalic acid blocks absorption, making the bio-availability quite low). If the goal is iron, I’d use kale, collards, or chinese broccoli. If the goal is green vegetables and all their other lovely nutrients, it’s great!
Nah, iron isn’t really a huge concern because she is only one years old. I think I just mentioned it as a joke ( a little iron makes me think of a little baby lifting weights). Plus, she usually has oranges or strawberries when I serve spinach, since vitamin c counters the oxalic acid. We serve what comes in the CSA, so kale and collards will have to be another day! Thanks!

Yep! She thinks sandwiches are hysterical. She was always grabbing ours, so I think for now there is a fascination about being like her parents. She likes to have one fourth in each hand, takes a bite from both, then laughs hysterically.
